Bu zhi chun is a cultivar used in the Chinese province of Fujian to make yan cha ("rock teas"). Characterised by its end-of-winter harvesting, the name of this tea plant means “knows not of spring".

Prepare this tea warm:
With the tasting set or a teapot: 5 minutes in water heated to 195°F.
With the Gong Fu Cha: infusions during 30-40 seconds.
